I make something similar, but usually use just 1 lb of ground meat (turkey, chicken or beef, depending on what's in the freezer) and then stir in two cans of drained and rinsed beans (kidney, pinto, whatever!) A simple substitution to stretch the meat :) Oh, and I think you a 16 oz jar of *SALSA* in place of the rotel (although I suppose hot sauce could be one way to spice up your marriage :) Always good to have some good, quick casseroles in the repertoire!
