trying to lose a few pounds finding yummy desserts to indulge in can be quite challenging. Each week I try to find one or two Weight Watcher friendly dessert recipes to try. Some I would never share because they were awful, but every now and then I stumble on a keeper. This would be most definitely a keeper and who can resist a warm apple dessert to welcome in autumn!

Apple Brown Betty
Makes 4 servings – 3 points per serving

4 apples, peeled, cored, sliced (I like to use granny smith)
4 slices of light whole wheat or multi grain bread, lightly toasted
2 tbsp. packed light brown sugar
1 tsp. Cinnamon
2 tsp. Unsalted butter
1/3 c. water

1. Preheat oven to 375 degrees. Spray 1 ½ qt. Shallow casserole dish with non stick spray. Place half of the apples in the dish.

2. In a food processor or blender, pulse the toast to coarse crumbs. Transfer to a small bowl. Combine with brown sugar and cinnamon. Sprinkle half the mixture over the apples, then layer the remaining apples and crumb mixture. Dot with the butter. Add the water. Bake until the top is crisp and the fruit is bubbling, about 45 minutes.

3. Add a dollop of fat free Cool Whip to make it that much more delicious.
