My childhood memories are filled with the colors and scents of Autumn. I remember watching the vanilla ice cream melt from the touch of those freshly baked apples as I waited for my mother to serve it.
At our home I try to re-create those warm and cozy fall memories for my family. Nothing can replace my satisfaction when I see the smile on their faces when they walk in the house and get that first whiff of those sweet, cinnamon-y apples baking in the oven.
One of our favorite desserts is homemade apple crisp. This recipe is so simple and quick to put together that you won't mind a bit when they beg for more!
Apple Crisp
Makes 4-6 servings
8 small apples
1 cup flour
1 cup sugar
1 T baking powder
1 egg 1
1/2 T cinnamon
2 T butter, melted
1. Mix flour, 1 cup sugar, baking powder and egg until crumbly.
2. Peel, core and slice the apples. Mix together with 1/2 tablespoon cinnamon. Place them in a greased 8×8 baking dish. Evenly spread flour mixture on top of the apples.
3. Mix 1 tablespoon cinnamon with 1/2 cup of sugar and sprinkle on top. Drizzle with 2 tablespoons of melted butter.
4. Bake @ 300 degrees for one hour or until browned and crunchy. Serve warm; you may also add a scoop of vanilla ice cream on top!
