Baked Macaroni and Cheese is a dish that my mother used to make for us all the time as children. She who didn’t care for cheese would make this knowing that we all loved it.
The amount of ingredients depends on the size of your baking dish. These amounts are assuming you use a 2 quart casserole dish. I have found 2 quarts to be enough for about 4-6 servings as a side dish and about 3 servings as a main course.
2 cups elbow macaroni
At least 1 lb Cheddar cheese grated (using the pre shredded doesn’t taste the same, the melting texture is different)
½ cup milk
That’s it! This is the easiest dish to make and one of the best tasting.
Boil the macaroni and drain.
Place a small amount of cheese in the bottom of the casserole dish, layer half of the macaroni and then half of the remaining cheese and repeat.
Your top layer of cheese should cover all macaroni pieces.
Pour the milk around the entire top of the dish.
Place in a preheated 350 degree oven for approximately 30-35 minutes.
You should see no trace of the milk on the bottom and the top should be golden brown and crusty (you will fight to the death over the crusty top layer!).
My family’s favorite is this as a side to a nice juicy burger and some baby peas topped off with a big glass of milk!
For variations you can add in other cheeses such as parmesan or jack, you could even add a layer of vegetables.

This is the same recipe my mother made all my growing up years and now my daughter and I make it all the time. It's a favorite at our house too!
I always thought peas were the perfect vegetable pairing for mac and cheese.
YUMMO, as Rachel would say. Thanks for sharing this recipe with us!
I make it in the microwave for my 4 year old, but I make it in the oven for me. I love the crusty parts.
