This recipe comes from my mom. Making one large batch and storing in an airtight container is much cheaper than buying individual packets of hot cocoa mix.
Hot Cocoa Mix
Makes many servings
8 qt. box of dried instant milk
1 small jar powdered coffee creamer
1 c. powdered sugar
1 small container of Nestle Quik chocolate mix
1. Mix all ingredients together and store in an airtight container. A large plastic ice cream container is good to store this in.
2. Fill cup about 1/3 full of mix and add hot water. Stir and serve.

I think it's a great idea to make your own hot chocolate mix, but what about the transfats contained in the coffee creamer? The recipe I've always used (and our family loves!!) is this:
3 cups nonfat dry milk
2 cups confectioners' sugar
1 1/2 cups cocoa powder
1 1/2 cups white chocolate chips
1/4 teaspoon salt
Combine ingredients in large bowl. Working in two batches, pulse ingredients in food processor until chocolate is finely ground. Store in airtight container for up to 3 months. To make hot cocoa, stir 1/3 cup of this mix into 1 cup of hot milk. Top with whipped cream or mini marshmallows.
I agree…the transfats are a concern. I've heard they are like plastic in your arteries. Yuck!
Here's what we use, and we often do top it off with a little milk to make it creamier, but it does avoid the transfats. My kids like to add a little cinnamon for Mexican flavor.
You need:
6C milk powder
1C granulated sugar
3/4C cocoa powder
Fill your blender pitcher with the dry milk powder. In my Bosch blender, that is nearly full. Process at high speed until the milk is more powdered and the level has gone down. Add granulated sugar and cocoa powder.
Process again until the sugar and cocoa are completely mixed. We use about 1/3C in a mug then add boiling water, but leave a little room to add some milk if you want it creamier (I often do not add the milk and it's fine for me, but dh likes the milk). The blending also helps it dissolve and that's the only thing you have to get dirty. Pour it into a storage container and you've got a nice size batch of cocoa mix.
I was intersted in the trans-fat worries…I checked my beloved coffee creamers. They are trans-fat free.

Fussy, which creamers do you use that are okay as far as transfats? Does that mean no partially hydrogenated stuff, too? That would be great to find something like that!
