With fall right around the corner, now is the time to find some delicious dinners that will warm up your loved ones on those brisk evenings. This recipe puts a casserole twist to the old favorite, chili.
Tamale Casserole
Makes 6 servings -6 points per serving
4 tsp. Canola oil
1 green pepper, seeded and chopped
2 red onions
1 jalapeno pepper
1 garlic clove
½ lb ground turkey breast
1 c. tomato sauce
1 c. frozen corn
¾ tsp salt
½ tsp chili powder
2 c. water
2/3 c. stone-ground yellow cornmeal
1/3 c. shredded fat free Monterey Jack Cheese
1. In large nonstick skillet, heat oil over medium heat. Sauté bell pepper, onions, jalapeno pepper, and garlic until softened, about 5 minutes.
2. Add the turkey and cook, breaking apart with wooden spoon, until browned about 5-8 minutes. Stir in the tomato sauce, corn, ½ tsp salt, and chili powder. Bring to a boil. Reduce head and simmer, covered stirring once or twice, until the sauce thickens slightly, about 15 minutes. Transfer into an 8" square baking dish.
3. Preheat oven to 350 degrees. In a medium saucepan bring 1 c. water and remaining salt to a boil. In medium bowl, whisk the cornmeal into the remaining 1 c. water. Slowly pour the moist cornmeal into the boiling water in a thin steady stream, stirring constantly. Brink mixture to boil. Reduce heat and cook, stirring constantly, until the mixture thickens and begins to form large bubbles about 5 minutes. Spread over the turkey so it is completely covered. Bake 25 minutes, then sprinkle the cheese and bake until the cheese melts, about 5 minutes longer. Let stand 10 minutes before serving.
- Warning: Using the chili powder and the jalapeno definitely adds heat. If you are serving little ones or those who don't care for too much spice, you can omit the jalapeno and halve the chili powder to get the same delicious meal without the dragon fire!!
- Hint!! While this recipe is super yummy and pleased my whole family from my super picky husband to two young children, it is not a "quick" recipe so perhaps plan to make it for a Saturday or Sunday when you have time for preparation. The leftovers were awesome though so then you can pack some for lunch during the week!!
