I'm not going to lie, I wore myself out at BlissDom09. It was amazing and crazy and fun and exhilarating and more spectacular and more things that I can't even begin to find the words for right now.
I didn't eat properly (I barely at at all) and believe me when I say that upon coming home, my body practically shut down it was so worn out. I was no good to my family, myself or anyone else that way so I made a vow to start eating better and that meant starting each day off with a good, filling, healthy breakfast.

I have been writing all about the power of eggs so I decided to put it to a week long test, actually eating eggs every day for breakfast to see how much mind and body energy a healthy breakfast gave me throughout the day. I knew it worked on a day to day basis, but when I was already exhausted and struggling to keep up with a positive attitude and set a good example for my kids… well, this was putting it to the test and y'all, what I found really surprised me.

Every day I got up and had either a BEST sandwich, a fried egg with fruit, scrambled eggs with a dash of seasoning and bacon or an egg in a hole. Not long after eating, I would feel energized, it was easier to maintain an positive attitude and i was enjoying playing with my kids, instead of looking longingly toward my bedroom and the comforts of my huge bed and down comforter. I wasn't empty and hungry an hour later, I made it all the way to lunchtime without actually thinking about what and when lunch was! I'm trying to tone up and slim down, so not snacking is huge!!

I fed my kids eggs with me and I noticed their attitudes were better, they weren't constantly opening up the fridge or whining, "I hung-gy, Mommy" (Monkey). Princess did better at pre-school, she paid attention and didn't talk when she wasn't supposed to!!! (This is a major win!)

Monkey wasn't beating down the pantry door, and his tantrums were fewer, and if you have a 2 year old, you know the enormity of this.

So, eggs for breakfast everyday made us happier, fuller and better able to live our lives. This is one lesson that I'm thrilled to have learned.

    There's just something about an egg – and even more so when it's fresh from one of you sweet laying hens. I'm becoming more of an urban socialite in Scottsdale with six laying hens in the back yard – right near the swimming pool, across from my garden.

    Evey time one of my girls lays an egg, I just about jump for joy. Those eggs "hot off the press" (sorta) are simply the best.

  2. I eat eggs every day …. I'm just that boring. Two eggs scrambled with rye or whole wheat toast, either at my favorite diner ( the Yakkity-Yak diner!) or at home. I might celebrate some random event once a month or so by also having crisp bacon, but that's a rare treat. Day to day it's eggs ………… and they always keep my tummy full and my mood up. If for some strange reason I miss my eggs, I can tell by how uncharacteristically hungry I get.
    Eggs are such a perfect food nutritionally, too. Great protein! Put that with whole grains, a little fat, and some fruit ….. and life (breakfast) is good!

    I am on a morning egg kick as well – but it's part of a diet. (No wheat for a week)
    What I love making is a scramble with egg, fresh basil, red bell pepper, avocado and parmasean. When I'm not depriving myself of carbs, I also include diced potatoes and even serve it for dinner sometimes. Total yum.

    I love the sweetness of cereal, however, so I don't know if I could do eggs everyday forever. Maybe both!
