Pasta with Chicken and Artichokes

If you enjoy artichokes, perhaps pesto or even olives you will love this meal. I don't know where my family got it from, whether it was a meal that was created because it was the day before grocery shopping or if it came out of a magazine but it is delicious! I've even added some tips to make it easier on your wallet and your time!

Chicken Artichoke Pasta

  • 1 small roasted chicken
  • 1 can of diced olives, or buy whole and dice them yourself
  • 2 cans of artichoke hearts in water
  • 1 jar of pesto sauce
  • 1 package of linguine
  1. Bring water to boil in a large soup pan and add linguine.
  2. While linguine is cooking, pull apart your roasted chicken and throw it in a bowl.
  3. Once linguine is finished toss it with the chicken.
  4. Add the olives, artichokes and pesto sauce. Toss it all together and you’re done!

Just a few tips:

  • You can buy a whole chicken for less than a pre-roasted chicken.
  • Lately, Wal-Mart has been selling a local brand of chicken for $5.00 for a 7lb. Roast it yourself.  You can use 6 oz Old Bay Seasoning or your own favorite.  Nothing fancy  required, just your typical roasted chicken.
  • Throw in a few drops of olive oil (or veggie oil) to your water for the pasta. It will help it to not stick.
  • You can also make your own Pesto. That link will take you to the recipe that I use.
  • I recently discovered you can also freeze pesto! In order to freeze pesto do not add in the parmesan cheese. Simply fill up an ice cube tray with the pesto sauce.  Once frozen, place the pesto cubes into a Ziploc Freezer Bags, Quart.  When ready for use, defrost and add in the parmesan from there.

This, in the long run, will make the recipe a tad bit less expensive since you will not be purchasing pre-made pesto (it can be a bit pricey, depending upon the brand). The ingredients for pesto pay for themselves.
