
More often than not, I find myself coming home to a starving husband and kids, yet very little time to get dinner on the table at a decent time. I could always pop a frozen pizza in the oven, but, really, that's no way to live, so instead, I have devised a series of recipes that allow me to feed my family in under an hour.
My stepdaughter is a big fan of Chicken Cordon Bleu, which can be a challenge to make, even when you're not pressed for time. My recipe, however, is quick, simple, and kid-friendly.
Sara's Easy Chicken Cordon Bleu
* 4 Chicken Breasts
* 4 Slices of Ham
* 4 Swiss Cheese Singles
* Bread Crumbs
Preheat oven to 350 degrees. Spray or grease 8×8 baking dish.
Pound out chicken breasts to thickness of between 1/2 and 1/4 of an inch. On each one, layer a piece of ham and a swiss cheese single. Roll tightly and place in pan, seam down, or secure with a toothpick.
Sprinkle bread crumbs on each piece of chicken. Bake for 30-45 minutes or until cheese is bubbly and chicken has reached an internal temperature of 190 degrees.
To make this dish extra-special, I like to serve it with sour cream mashed potatoes – I found this recipe in Real Simple magazine last Thanksgiving and make it every chance I get.

Sour Cream Mashed Potatoes
* 4 pounds red potatoes (about 8), halved
* kosher salt and black pepper
* 2 cups sour cream
* 1/2 cup milk
* 4 tablespoons (1/2 stick) unsalted butter
* 2 scallions, chopped
Place the potatoes in a large pot. Add cold water to cover and bring to a boil. Add 2 teaspoons salt, reduce heat, and simmer until tender, 15 to 18 minutes. Drain the potatoes and return them to the pot.
Add the sour cream, milk, butter, scallions, 1 teaspoon salt, and 1/4 teaspoon pepper and mash. Transfer to a heatproof bowl, cover, and set over a pot of simmering water to keep warm, up to 1 hour.
