
Over the past month in partnership with the American Egg Board I have shared recipes, shopping tips, egg facts and other tips and tricks about cooking and general kitchen and food knowledge. I've shown y'all how easy it is to incorporate eggs into your everyday lives, through faux fancy quiches, migas, frittatas and even green eggs and ham. I've egg-ducated you on the proper and FAIL PROOF way to hard-cook eggs and I've even videotaped the kids and me cooking and given y'all the chance to laugh at what an amateur I am.
But, throughout this process, I have learned a lot about my own habits as well. I have learned about healthier eating and the importance of knowing what I'm putting into my body and my family's bodies.
I challenged myself to eat a better breakfast, including an egg in one various form or another every day, and I've even tracked the results in myself and my kids. I can tell you this, I've seen positive differences when we've eating an egg breakfast, I have seen the difference in my kids and I have felt the difference in myself. I have more energy and I'm more alert, I feel better and because of that, I am more patient with my kids, I have more fun with them and that makes a difference to all of us.
I hope that you have had as much fun, tried some new recipes and gained as much from this experience as I have. I encourage you to pick up some eggs on your next trip to the grocery store and find out for yourself that eggs really are, all they're cracked up to be.
