food Eggs and Choline, A Recipe For A Healthier You So what are the benefits of eating eggs daily? What? You mean besides the taste, versatility and ease of eggs? Well, let me tell you. One of the things that intrigued me the most about working with the American Egg Board was learning about choline.  Have you ever heard of choline??  It is an essential nutrient that is found in foods such as eggs, and among its many benefits, it is associated with a 24% reduced risk of breast cancer, according to a study supported by a grant from the US National Institute of Health. Only 10% of Americans currently get enough choline. According to the Institute of Medicine the adequate choline intake is 550 mg per day for men and breastfeeding women, 425 mg for women and 450 mg per day for pregnant women. Did you know that one egg contains 125.5 mg of choline? That's a quarter of the recommended daily amount! My Mother in Law is a two time breast cancer survivor, one of my dearest friends, OhMommy just found out that her mother in law is fighting breast cancer for the third time… almost every one of us has been touched by breast cancer in some way.  Something as simple and delicious as an egg a day could help us to protect our mothers, sisters, selves and daughters from the ravages of this disease. I am very passionate about learning everything that I can about preventing breast cancer and supporting any and all research for a cure. Before signing on with the American Egg Board, I had never even heard of choline and now I am trying to find out as much as I can about it, and spread the word to everyone that I know. There's a lot of information on the egg board's choline site, www.cholineinfo.org. How amazing is it that just serving my family one egg every single day, I can provide them with a much needed essential nutrient that helps prevent breast cancer, helps to prevent birth defects, helps improve memory and reduces the risk of heart disease.     I love eggs! Especially hard-boiled. They are a great snack, and I knew they were good for me but I really didn't know specifically how or anything about choline. Great post!
