Hashbrowns and Ham Casserole

During the holidays leftover ham was exploding out of my fridge. Since I'm a casserole person, love the idea of a variety of ingredients for an entire meal in one dish, I decided a casserole with ham was necessary.  Using fat free and low fat ingrediants I was even able to make a casserole that was Weight Watcher friendly!

Serves 6 / 4 points per serving

5 c. Ore Ida Frozen Country Style Hashbrowns
8 oz. Ham (cubed)
8 oz. fat free sour cream
4 oz. Kraft 2% Sharp Cheddar Cheese (shredded)
1/2 c. onion (finely chopped)1
1 Tbsp. bread crumbs
1/2 bag of frozen peas

Preheat oven to 400 degrees.

Spray a small saute pan with non stick spray and saute onions until translucent.

Mix hashbrowns, ham, cheese, sour cream, onion, and frozen peas in mixing bowl. Spray a medium casserole dish with non stick spray and then spread the casserole mixture into the dish. Top with bread crumbs.

Cover with foil and bake for 45 minutes. Uncover and bake 15 more minutes or until breadcrumbs are crispy and the casserole is bubbly.

The trick to keeping this recipe within 5 points is the low fat cheese and fat free sour cream. If you use regular cheese and sour cream, a portion size will be more than 5 points.
