“I do not like them, Sam-I-Am. I do not like green eggs and ham”
perhaps one of the most read and highly quoted phrases in childhood. However, at the end of the magical Seuss book, the lesson learned is that he does indeed like Green Eggs and Ham! (The further lesson learned, Don’t knock it until you’ve tried it)
My kids were half excited and half weary when I suggested making green eggs and ham for the first time but, they were game so off we went.
It was fun to cook with them and the end result, they LOVE green eggs and ham so I thought I’d share our recipe and a video of the kids making them. Eggs are one of the best things we can give our kids for breakfast because they give them energy to stay alert and focused all day, and varying the ways of serving them is a brilliant way to ensure that your kids will eat them and enjoy them every day.
- 1 slice of ham
- 4 eggs
- green food coloring
- salt and pepper to taste
- ½ Tbsp butter
- Melt the butter in a skillet and cook the ham until the edges are crisp and the ham is nicely browned, set aside and cover.
- Crack the eggs in a bowl and whisk them until the yolks are broken, season with salt and pepper and then add in green food coloring until you reach your desired shade of green!
- Cook the eggs in the same skillet that still has the butter and ham drippings.
- Let them cook until hard, scrambling them lightly while cooking.
- Serve on a plate next to each other.
This recipe serves both of my kiddos, I just slice the ham in half.
*you can also chop the ham up and add it to the eggs as they are cooking for a heartier scramble
* To make this a bit more adult: use chopped fresh spinach to give your eggs their green tint and give you some extra vitamins.
