Welcome to the 17th edition of our weekly menu. This week we're reducing costs by serving a meatless meal one night, stocking the freezer another (the albondigas freezes well and can be saved for a future meal), and on pizza night meat is not the star of the show. The grocery list has everything but the most basic pantry items. Before going to the grocery store, copy the list into a notepad file, check the list against your own pantry, delete the items you have on hand, add your basics for breakast and lunch, and print.

1.  Chicken, mushrooms, and peppers, roasted potatoes
If you've never roasted potatoes, they are awesome. Dice into 1" chunks, toss in a bowl with a TBSP or two of olive oil, spread on a greased baking sheet, sprinkle with kosher salt, garlic powder, & pepper, and bake for 20 – 40 minutes depending on whether they are cooked at 350 or 400 and how done you prefer your potatoes. If you are a fan of Lawry's Seasoned Salt, that can be used in place of the other seasoning.

2.  Oven fried eggplant parmesan, marinara, spaghetti
If you have leftover sauce, freeze it for next time.

Mexican Meatball Soup

3. Albondigas, flour tortillas or tortilla chips

4. Pork chops with raspberry sauce, zucchini and mushrooms, corn

5. Tuna stuffed tomatoes, celery with cream cheese or ranch (for the kids) and spinach salad with mustard vinaigrette for the adults, unless your kids are strange like mine and fight each other for salad.
Cut the tops off and hollow out 4 -6 tomatoes, fill with your favorite tuna salad, top with shredded monterey jack or mozzarella, and bake at 350 for 20 minutes. Many thanks to my friend Sean Rheaume for pitching the side dishes for this item. They are often a one dish wonder, but I felt the need for a little more oomph.
Cheater's Spinach Salad – use bagged baby spinach, sliced onion, mushrooms, toss with a mustard vinaigrette.

6. Pizza night!
Here is a basic pizza crust and a Crockpot pizza sauce. If a crust feels like too much effort grab a pre-made one or a couple loaves of Italian bread (you'll need to add it to the list).  I've learned I can get a lot of extra vegetables into my kids if I let them decorate their own pizza.

7. Hang on to your hats folks, it's time for CORN.

Beef broth (2 cans) or Better Than Bouillon
Bread flour
Chicken broth, bouillon, or Better Than Bouillon
Corn starch
Diced green chilies (2 small cans)

Molasses (it's by the syrup)
Seedless raspberry jam
Spaghetti noodles
28 oz cans crushed tomatoes (min 3)
14.5 oz cans diced tomatoes (min 4)
8oz can tomato paste (1)

Ground beef (2 lbs)
Whole chicken
1/2" boneless pork loin chops
Pepperoni or sausage whichever you prefer on pizza

Bagged baby spinach
Bell peppers
Button mushrooms (2 packages minimum)
Celery
Cilantro
Green onions
Eggplant (2 medium minimum)
Garlic
Onions
Parsley
Potatoes
Tomatoes (4-6) I know it's off season, but cooked recipes can be more forgiving. If you are against, the idea, grab a loaf of bread and make tuna melts instead.
