I'm sorry we missed last week, but we had an emergency with my youngest (she's fine now) and planning a menu was the last thing on my mind.
For those just getting budgets under control, meal planning can be surprisingly effective. Just knowing what you plan to eat for the week eliminates costly trips through the drive through and helps prevent food waste. If this is your first week using the menu plan and shopping list your cost may be artificially high. Each week I use many of the same dry goods and spices, once your pantry is stocked with these items your grocery bill will drop significantly. To use the shopping list, simply cut and paste the grocery list into a word or notepad file. Delete the items you have on hand and add what you need for breakfast and lunch. What could be simpler?

Budget Stretching Chicken Thighs
1. Garlic and soy chicken thighs, rice, zucchini and mushrooms.
2. Corn beef and cabbage for St. Patty's Day
If you have time find a recipe or buy a loaf of Irish soda bread, otherwise biscuits will do
3. Loaded baked potato soup, tossed salad, cornbread
4. Oven baked chimichangas, Spanish rice, fried green corn

5. Salmon with lemon and rosemary, baked sweet potatoes, steamed broccoli
Baked sweet potatoes are a cinch. Scrub well and prick with a fork. Place the potatoes on a baking sheet and brush with olive or vegetable oil. Bake at 400F for at least an hour, if they are large it could take as long as 90minutes. Squeeze gently to check.
6. Brinner – Breakfast for dinner. This week it's French toast, bacon, and fresh fruit
Quick, easy, and budget friendly since you "needed" the bacon for the potato soup. If you have never made French toast, just beat two eggs with a half cup of milk, add cinnamon and nutmeg (optional) to the batter. Dip slices of bread into the batter and fry over medium low until golden, turning once.
