
Last week I said I liked to bake from scratch but didn't like the clean up. I also like to cook dinners from scratch but I'm not crazy about the mess from that either, but this week I'm trying something I've never made before: Corned Beef and Cabbage. It's a tradition on St. Patrick's Day, and you don't even have to be Irish.
I found this recipe at All Recipes, my favorite online recipe source. It looks really easy.
INGREDIENTS
- 3 pounds corned beef brisket with spice packet
- 10 small red potatoes
- 5 carrots, peeled and julienned
- 1 large head cabbage, cut into small wedges
DIRECTIONS
- Place corned beef in large pot or Dutch oven and cover with water. Add the spice packet that came with the corned beef. Cover pot and bring to a boil, then reduce to a simmer. Simmer approximately 50 minutes per pound or until tender.
- Add whole potatoes and carrots, and cook until the vegetables are almost tender. Add cabbage and cook for 15 more minutes. Remove meat and let rest 15 minutes.
- Place vegetables in a bowl and cover. Add as much broth (cooking liquid reserved in the Dutch oven or large pot) as you want. Slice meat across the grain.
For dessert I may have to make either Tara's Chocolate Peanut Butter Balls or Lynn's Peanut Butter Sheet Cake. Scrumptious!

I am making something like this, this week too. You have to have corned beef this time of year. I hope you like the PB cake if you make it.
I completely forgot about tomorrow! We are having shepherd's pie, but I think that is British not Irish… maybe we can have a salad to add green to our meal!
