With meetings and activities, it can sometimes seem easier to just pick up dinner than to make something at home. We have fallen into that trap way too many times. We almost did it again the other night, but with under ten minutes and minimal effort on my part, we had dinner from home.
- To begin, I washed and pierced three potatoes .
- Then, I popped them in the microwave for seven minutes.
- I then checked them and put them in for another minute and a half.
- Keep in mind the microwave is also a great way to cook baked potatoes as a side dish for a meal, if you're not planning on having the oven on for an extended period of time.
- Once the potatoes were done, I heated up some diced ham (great use for leftover ham, by the way!) and set out some butter and light sour cream.
Voila!
It was delicious and quick, and so much better for us (and our checkbook) than the original suggestion that Eric pick up food on his way home.

Oh wow, Misty — that sounds awesome! I'll have to remember that the next time we need a quick dinner! That will be a fun change from the ham.
I LOVE baked potatoes! They're such a great and quick meal. I usually just eat mine with salsa and a smidge of sour cream or fat free plain yogurt. If I *happen* to have leftover chicken or steak, I'll cut that up in there too. YUM!
