On Friday, I shared my experience making Carnation's Famous Fudge and how I'd been contacted by Carnation to spread the word that Carnation isn't just for baking, it's also for adding extra creaminess and flavor with ease to all kinds of different food. After all, Carnation is The Cooking Milk!
So, I took them at their word and decided that I'd see how easily (or successfully) Carnation Evaporated Milk could be used to make a simple, flavor packed pasta sauce.

The results were surprising. Nathan and I were both VERY please with the creaminess of the sauce and the flavors were outstanding.. plus, it was easy.

I got out my sautee pan and a pot, put some water on to boil for my pasta, heated up the saute' pan and got to work. All told, this probably took 15 minutes but that's because I used chicken that I had leftover from the previous night's dinner.
Spicy Chicken and Veggie Pasta with Carnation Cream Sauce
This is one of those made with whatever I had on hand, which is why the Carnation Evaporated Milk is so handy.. it's so easy to have some in the pantry and made this pasta sauce that much easier!
- 4 slices uncooked bacon, chopped
- 8 mushrooms, chopped
- Handful fresh green beans (raw), chopped (yes.. the measurement really is a handful.. just grab some and go)
- 1 to 3 tsp crushed red pepper flakes (depends on your spice level)
- 1 Cup Carnation Evaporated Milk
- 7 oz Barilla Pasta Plus Spaghetti (or your favorite Barilla Pasta Plus Noodles)
- 6 garlic cloves, crushed
- 1/4 Large yellow onion, chopped
- 2 Tbsp olive oil
- 1 1/2 C Four Cheese Italian Blend Shredded Cheese
- Heat a skillet over medium high heat, add olive oil and toss in garlic, bacon, mushrooms and onions.. saute' until the bacon is cooked and the garlic and onions are translucent
- Put pasta in boiling water to cook, while your veggies and bacon are cooking.
- Toss the green beans in with the veggies and bacon and cook, stirring frequently
- When there is 2 minutes left on the pasta, pour in the Carnation Evaporated Milk, red pepper flakes and Cheese. Cook Stirring frequently.
- Drain pasta, add to the sauce pan and stir until it all the noodles are covered.
Serve topped with sliced chicken (or not) and garnish with parsley flakes and more cheese.
Voila! ~ Delicious and easy. Seriously, I will be serving this again. It was super simple to make and packed with flavor!

That sounds yummy! I've never tried cooking with carnation before!
