We've got lots to do and not a whole lot of time to do it in. Before we venture into the newness of each day, we need to make sure we're properly fueled and revved to go. Translation?
We need breakfast!
Touted as the single most important meal of the day, a healthy breakfast gives our body the nutrients and energy it needs to take on the mountains and mole hills of life. You wouldn't run your car on "E" and then expect to drive it 100 miles per hour would you? Of course not! Well, your body cannot possibly function at peak performance without proper fuel–and that means breakfast.

INGREDIENTS
- 6 item large eggs
- 1/3 to 1/2 cup milk or half-and-half
- 1 teaspoon sea salt
- 1 item Freshly ground black pepper
- 1 1/2 cup cooked vegetables
- 1 item chopped green onion
- 1/3 cup shredded Cheddar cheese
- 2 tablespoon olive oil
- 2 tablespoon grated Parmesan cheese
PREPARATION
In bowl, whisk eggs with milk, salt and pepper. Stir in vegetables, onion and Cheddar cheese. In 10-inch broilerproof skillet with lid, heat oil until hot over medium heat. Add egg mixture; spread evenly. Lower heat; cover and cook until eggs are set around sides of pan, about 10 minutes. Uncover skillet; sprinkle with grated Parmesan cheese. Finish frittata under the broiler until top is completely set. Delicious with potatoes.
