- 4 tsp canola oil
- 12 oz 93% beef (I am sure you could use ground turkey too)
- 1 C. frozen chopped onions
- 1 pkg frozen mixed vegetables
- 1 can diced Italian-style tomatoes
- 4 potatoes
- 3/4 C. fat-free or 1% milk
- 1 C. fat-free grated cheddar cheese
3) Heat a medium skillet over medium heat and add oil. Brown meat, breaking up into small chunks. Add onion, vegetables, and tomatoes. Cook 5 minutes. Pour mixture into small casserole dish. Peel potatoes (now that they are cooked the skin peels right off) and mash with the milk in a small bowl. Spread meat mixture with potatoes. Sprinkle with the cheese. Bake 10-15 minutes until cheese is browned and bubbling.
**Supposedly the recipe serves 4 with each serving being 8 points, but I used the same ingredients, put it in a 9X11 casserole dish and think that you could at least serve 6 with the recipe as it is.
