Is there anyone out there that doesn't like Macaroni and Cheese? Anyone? Bueller? I didn't think so. It's right up there at the top of my list of good old comfort food. I use a tried and true recipe, given to me by one of my best friends, Jen. It makes a cheesy, totally creamy mac and cheese. You know how some homemade ones can be grainy and well, kind of curdled and dry? This one is nothing but creamy. The secret? Food snobs, you may want to avert your eyes now... Velveeta. Yes. I'm serious. I tried a few other recipes for mac and cheese. They tasted fine, but were dry, and I just couldn't get the famous "creamy" type that I was looking for. Moist and Delicious Corn Muffins
The muffin gods have shown me the way. And so did Dawn at Vanilla Sugar. She posted a little while back about Chocolate Cinnamon Scones by Gale Gand, which reminded me that I've got one of her cookbooks in my ginormous cookbook collection. It's not that I didn't like the book, but you know how it is. You buy a cookbook, read it cover to cover, earmark a bunch of recipes, and then forget all about them. So I went and pulled it from the shelf to give it another look and found her recipe for Featherlight Corn Muffins. Holy mother of moist muffins (that sounds so wrong, lol!), these are P-E-R-F-E-C-T. Pumpkin Pie Latte and Pumpkin Morning Glory Muffins
It's that time of year again--when we see pumpkin popping up in recipes all over the place. And really, I love that! What's better than coming in from the cold to the comforting aroma of pumpkin and spices filling your home? This latte is so good, and so much more economical than going to your favorite coffee chain (that constantly serves burnt coffee--I'll bet you know who I mean). You can get the latte part of this ready while your coffee is brewing, then mix the two right in your travel mug and head out the door. This would also be nice for a holiday breakfast! American Chop Suey
A family favorite--American Chop Suey! My mom used to make it for us about once a week, and we happily gobbled it up. She made it for my kids when they were younger and it quickly became one of their favorites, too. It's a great comfort food, that's for sure. It's quick, easy, and kids love it! It shows up on school lunch menus around here to this day, and even though I don't make it often (What is wrong with me? It's super easy!) my girls are so happy when I do. My 13 year old actually clapped and said "yay!" when I told her we were having this the last time I made it. It's not easy to get happy reactions out of a 13 year old girl, by the way.
