Chickpea vegetarian burgers

I think that burgers are one of the most satisfying foods on earth, even when they are not made out of meat and can be called healthy. My favourite thing about vegetarian burgers is the extra add-ins, and this recipe surely doesn't miss any: grilled cheese, guacamole and caramelized onions (of course any extra would just make these burgers even more delicious). I would have liked to use a heartier bread, but I couldn't find any at my local shop this morning! I think that any wholesome home-made or store bought bread would pair very well with the chickpeas. The burgers themselves taste like falafel and can be flavoured with any spice mix and seasonal greens. These burgers are perfect for a spring/summer weeknight dinner or for a vegetarian option at a barbecue along with some roasted sweet … [Read more...]

Kale goat cheese ravioli

Home-made pasta is one of the most delicious and versatile things in the world: every year when spring comes around I start making fresh pasta 2 to 3 times a week, ravioli is my absolute favourite because you can literally fill them with any seasonal vegetable and/or cheese you have on hands. These ravioli are colourful and healthy: they are filled with a simple potato-based goat cheese filling and topped with brown butter and kale. The recipe looks very long but it's actually very easy, the only tricky part is the home-made pasta, which it's fun to make with friends or kids. I really advise to use a pasta machine to roll out the dough, however if you don't have one you can also try using a rolling pin, but I should warn you, it's hard work. Of course, you can experiment with different … [Read more...]

Low Sugar Coconut Brownies

Until a few years ago I had never even thought of adding vegetables to baked goods, then one day I tried a vanilla cupcake recipe that included grated zucchini and I realized how great it was: vegetables help to reduce sugar and fat content in many baked goods while maintaining the texture. For those of you out there who hate beets don't worry I do too and you can not absolutely taste them in this recipe, they are only there for texture purposes. As the title suggests, these brownies contain less sugar than most recipes and they are also gluten free, which allows me to call them healthy (ish) brownies. These are not some of those fudgy brownies you eat a square of and you are full for the rest of the day, instead, they are very light and moist and I could finish off the whole batch by … [Read more...]

Buckwheat crepes with caramelized bananas

I have always considered myself more of a pancake person than a crepe person, maybe for the simple fact that when I wake up on a lazy morning making pancakes seems the easiest and fastest delicious thing to make. However, when I am craving a pancake at 9 pm, crepes are definitely fancier than pancakes and more appropriate to eat for dessert. Buckwheat crepes are a little bit heavier than ordinary crepes but they also have a nuttier and deeper flavour, in my opinion, in France they are usually eaten with eggs and ham for a savoury snack, the sweet version is quite difficult to find in restaurants but I think that buckwheat pairs very well with caramel. The batter is pretty easy to put together, the tricky part of making crepes is the cooking: a good nonstick skillet and a rubber spatula are … [Read more...]

Easter Chocolate Barks

At 22 years old, I feel a bit ashamed to admit that I still receive an Easter egg from my mum, and my grandmother..and my boyfriend. Needless to say, I always find myself with too much chocolate after Easter, I usually follow two strategies (depending on how I feel): Eat ALL the chocolate in a matter of 2/3 days (telling myself I should get rid of it before starting the “after Easter diet”) Store the chocolate in some container and forget all about it (i.e. letting it go to waste) Obviously, neither of these strategies are effective and/or clever, so I thought that this year I might turn my extra eggs into chocolate barks! Adding dried fruits, candies or pretzels makes the chocolate much more interesting and worth storing in a container and eating it a little bit at … [Read more...]
