Caribbean Pork Medallions

blissfully delish Savory Caribbean Pork Medallions

  • 1 large sweet potato, peeled and sliced thin
  • 1 small apple, peeled, cored, and sliced
  • 2 Tbsp dark brown sugar, packed
  • 1/2 C. apple juice
  • 1 tsp ground ginger
  • 1/4 tsp salt
  • 1/4 tsp allspice
  • 1/8 tsp cinnamon
  • 3/4 lb. lean pork tenderloin, trimmed of fat and cut into 12 medallions
  • 2 med. scallions, chopped
  1. Preheat oven to 400 degrees.
  2. Tear off four 12" square sheets of parchment paper or foil. Fold in half and cut into a heart with fold running vertically down center of heart. Open each heart to fill.
  3. In a bowl mix the sweet potato, apple, and brown sugar and mix until covered. Place even spoonfuls of mixture on the right side of all four hearts.

  5. In the same bowl mix the apple juice with all the spices. Add pork slices and toss to coat.
    Place meat on top of potato/apple mixture. Three slices should be placed on each heart. Sprinkle with sliced scallions. Fold heart in half and starting at top of heart make tight folds to seal the packets. Then fold the side and bottom in the same manner.
    Place the packets on a baking sheet.
  6. Bake until pork is no longer pink and the sweet potatoes are tender, about 18 minutes. Open packets carefully when testing for doneness as the steam will escape.
  7. Serve garnished with fresh scallions.
