Ever since I graduated college in the late 90′s, I have made this meal. There’s nothing to it, but it tastes fabulous. The best part is how much money you can save while feeding a hungry den of cubs.

1 can of Ranch Style Beans
1 can of *Rotel Tomatoes, drained
1 1/2 cups of rice (brown or white)
1/2 cup of **cheddar cheese
- Heat beans and tomatoes over low heat on stovetop.
- Cook rice per instructions.
- Mix the two together.
- Stir.
- Add cheese.
- Stir.
- Eat.
*If you aren’t into spicy, try the mild version.
**If you don’t have cheddar, sharp can also be used.
Elisabeth can be found trying ruling her roost at little miss mel.
