There are tons of health benefits to including watermelon in your diet. Not only is it mostly water which is great for hydrating in a busy summer; watermelon is low fat, and full of lycopene (important for both cardiovascular and bone health) and potassium. Plus it’s a natural diuretic and anti-inflammatory.

Watermelon Fizz is like a sparkling watermelon lemonade and I’ll be drinking it all summer!

FLORIDA WATERMELON FIZZ 

recipe from the Fresh from Florida website

Serves 4

  • 5 cups Florida watermelon (seeded and cubed) – for my medium sized watermelon this was about 1/8 or the melon
  • 2 cups sparkling water
  • Florida honey to taste (I used about 1 tablespoon)
  • 1 lemon, juiced
  • Fresh mint sprigs for garnish

Directions

  1. Add watermelon, honey and lemon juice to a blender and process until smooth.
  2. Strain puree through a fine sieve. (this yielded just under one quart of juice for me)
  3. Fill four glasses with ice.
  4. Evenly distribute the strained juice into each glass.
  5. Top each glass with sparkling water and stir once.
  6. Garnish with fresh mint springs.

If you aren’t serving four all at once, just keep the juice in the fridge and serve as needed. However, trust me this won’t last long once people know it’s available.
