I grew up smack dab in the middle of an Amish community and learned a lot about simple, easy, frugal recipes. This one is a fave because you can toss it in the fridge and throw it in the oven the next day (I’ve broken a few dishes from all that throwing and tossing in my kitchen)!
Let me count the ways I love this recipe.
- It’s like eating a cookie for breakfast. Don’t tell Mom.
- You can prep it the night before and pop it in the oven while the kids are getting dressed.
- Leftovers are yummy warmed up in the microwave. In fact, I often double this and have a warm, filling, healthy breakfast in the bag for the whole week!

Love it! This smelled so good while baking I could hardly wait for it to cool off so I could eat it! I think this recipe makes a great base and I can’t wait to play around with it. Too bad I am on a “soft and bland” diet for a couple days. Ugh. Good thing this totally satisfies! Thanks for sharing. 🙂
Yummy! I made this last night, packaged portions individually and grabbed one as I ran out the door this morning. My stomach is soooo happy 🙂 Only thing I added was some cinnamon. I will make this one again for sure.
I just tucked this into the oven. Like the PP, my almost 4 year old has textural issues with regular oatmeal, but he loves oatmeal cookies!
I threw in a small handful of raisins as well! 🙂

Oh my that sounds good. I am not a fan of regular oatmeal because of the texture. I do, however enjoy the taste of oatmeal in other baked goods. I think this might be THE way I can have my oatmeal for breakfast (and eat it too)!
