Peach Sushi Rolls

So, what can you do with jarred fruit (besides cobblers and cakes?) Mix the fruit with yogurt or cottage cheese.  Make it a side at the dinner table. Add some jarred fruit to a smoothie. Possibilities are endless. The taste and convenience of jarred fruit is hard to beat, and in winter (which is coming too soon) the fresh fruit in season options are extremely limited and it’s a natural to go to the jars.

PEACH “SUSHI” ROLLS– one serving

What you’ll need:

  • Flatbread – opt for whole wheat or whole grain when you shop.
  • Cream Cheese – softened approx. 1-2 TBL.
  • ½ cup Dole Sliced Peaches – drained.
  • Cinnamon (optional)

 ingredients

Directions:

  1. First spread softened cream cheese on the entire flatbread.
  2. 2.  Next, put the peach slices end to end (overlapping a bit)
  3. 3. Sprinkle with a little ground cinnamon if desired. **Best to line up fruit on the longer side of the flatbread.

4. Roll the flatbread. The tighter the better, press as you go.

5. Cut into 1” pieces and serve!

Peach Sushi is a delicious easy snack that looks fun too! The taste of this version with cinnamon reminds me of peach cobbler. There are lots of ways to customize your sushi – try some of these:

Variations:

  • Put a slice of ham lunchmeat on the cream cheese then add the peaches and roll– the salty-sweet combo is perfect.
  • Cut cucumbers or red bell peppers into matchsticks and line up next to the peaches. – crunchy and sweet and extra veggies to boot!
  • Add fresh basil leaves.
