1lb Green Beans – cleaned and snapped in half
1/2 medium onion – diced
1-2 T olive oil
Pinch Kosher Salt
Fresh Ground Pepper
1/2 C dried Cranberries
In a saute pan, drizzle olive oil around pan on meduim heat. Put onions and cranberries in pan, add salt and pepper, and lightly stir, cooking til onions are translucent.
Add green beans, tossing gently. Keep covered on medium heat 5-10 minutes til tender. It will be a great way to use up the summer produce from your garden or farmer’s market.
