12 Days of Blissmas Cookies Day 12: Brown Sugar Shortbreads

These cookies are a delicious, rich twist on traditional shortbread cookies. Using a cookie stamp or your cookie press discs gives them a fun holiday twist.
Ingredients
- 2 sticks butter, softened (1 Cup)
- 1/2 Cup packed brown sugar
- 1/2 tsp (rounded) apple pie spice
- pinch of salt
- 2 1/4 Cups all purpose flour
- small bowl of granulated white sugar
Preheat oven to 350 F.
- In a large bowl, beat butter on medium to high speed for 30 seconds.
- Add brown sugar, apple pie spice and salt. Beat until combined, scraping sides of the bowl occasionally.
- Beat the flour in 1/4 Cup at a time.
- The dough will appear crumbly, this is what you want.
- Shape the dough into 1 inch balls. Place the balls 2 inches apart on your cookie sheet. Using the bottom of a cookie stamp or your cookie press inserts (lightly grease with cooking spray if needed) press down onto the cookie flattening it and imprinting the design onto the cookie.
- Dip the top of the cookie into your granulated sugar and place back on the cookie sheet.
- Bake for 13 to 15 minutes until the cookies are a light golden brown.
Cool on a wire rack and enjoy.
