According to one of my very favorite books FoodFest 365!: The Officially Fun Food Holiday Cookbook today, is National Egg Day.
I love eggs, I love them fried, scrambled, turned into Migas or even hard boiled; I just love eggs!
Did you know that eggs are really good for you? Really really good for you. Check out some of these incredible egg facts:

- Eggs contain Choline which is essential for brain health
- Eggs contain Lutein and Zeaxathanin which are both antioxidants helpful in preventing macular degeneration
