Since I am notoriously bad about getting greeting cards mailed out in a timely fashion, I think my father would be most surprised to receive his annual Father’s Day card before the third Sunday in June instead of days afterward, or even not at all. And how many years have I even failed to do even that? Let’s not even go there. But this year, I’m getting a head start.
Though Miles Separate Us
I do not live close to my parents. We are separated by a couple of states and several hundred miles. A Father’s Day surprise can not be carried out in person and definitely needs some advance planning. I will need time to not only carry out my plan but to be able to ship it time for him to receive it before Father’s Day (again, that will definitely be part of the surprise!)
The Way the Cookie Crumbles
My father is not a fan of sweets, at least not in the way my mother, sister and I are! But he does have his favorites and his weaknesses. And there is nothing he likes better than a good oatmeal raisin cookie. There is, however, one hurdle to overcome; he’s diabetic. This year, I want to combine my love of baking with his love of oatmeal raisin cookies. I admit, I have never tried to make a cookie, or any other dessert for that matter, that caters to my father’s medical condition.
A Delicious Quest: Desperately seeking a good oatmeal raisin cookie recipe that is diabetic friendly.
I have perused several recipes on the Internet and it seems I have a few choices:
- I can use a sugar subsitute, like Splenda.
- I can use less sugar and substitute applesauce for fats which will also add in some more sweetness.
- I can use whole flour instead of white flour.
My plan is to try out a few of these recipes and hopefully find one that can compete with regular full sugar version. Then I’ll package them up, with a card, and ship them off to dear ol’ Dad. I think he’ll definitely be surprised!
