Did you know that today is National Pumpkin Day?
In honor of National Pumpkin Day I thought that I would share one of my favorite, simplest and delicious Pumpkin recipes.
Two Ingredient Pumpkin Spice Muffins
Ingredients
- 1 box of your favorite Spice Cake Mix
- 1 can Pumpkin – I prefer Organic (do NOT use pumpkin pie filling)
Directions
- pre-heat oven to 350 F
- Mix together the can of pumpkin and the cake mix, until thoroughly blended – this is a thick batter
- I use an ice cream scoop to portion the batter into lined or well greased muffin tins
- Bake for 18 minutes, or until an uncooked spaghetti noodle comes out clean
- Rest in muffin tin for about 5 minutes, then pop out and place on a cooling rack.
* These are exceptional served warm or cold.
