We’ve been talking a lot about eggs and I’ve shared many recipes, facts, health information and fun tips all about eggs and other power foods with y’all and now that y’all have multiple recipes to choose from, I’m encouraging you to get out of your shell ‘heh’ and make eggs in a way you never have before.
Does the quiche scare you? It shouldn’t, it’s easy, filling, delicious and a definite crowd pleaser. Do you have picky eaters? Make mini quiches and let each tray be a different filling. Just make the base of the quiche recipe, found here and then divide into two or three batches: each batch can be a different filling: mushrooms, broccoli, green onions, celery, ham — let your minds go wild. Then use a cup to cut individual ‘crusts’ out of a larger pre-made crust and cook in muffin tins. Voila – simple, fancy and delicious!
Don’t want to mess with the crust? Then try the frittatas which are essentially, crustless quiches. I’ve given you a great recipe that is gluten free and also a wonderful base for playing with the ingredients. These are quick, fun, delicious recipes that can be altered at your whims and the more comfortable you get with cooking these egg dishes, the more you can ‘eggs’pand your ingredients and your repertoire of breakfast, brunch and brinner dishes.
Anyone can make scrambled eggs and fried eggs, but have you tried a poached egg? Here’s a SIMPLE way to make them. Bring 2 to 3 inches of water to a boil and then reduce heat to keep the water gently simmering. Break cold eggs, one at a time, into custard cup or saucer, or break several into a bowl. Hold the dish close to water’s surface and slip the eggs into the water. Cook until the white and yolk are firm, about 5 minutes. The secret to pretty poached eggs is using very fresh eggs, which will hold their shape better!
Scrambled eggs can be dressed up by tossing in peppers, celery, onions, turkey bacon, ham or tomatoes and jalapenos while they’re in the pan cooking.
