(yes I read you here, too, I promise I am not a stalker though.) I have one of these pans, and I can never get the icing to look right. (case in point – my son’s b-day cake last summer: http://mgoetts.blogspot.com/2008/07/giant-cupcake.html) I want the icing to show the indentions in the mold, but I don’t know how to do it (so I just swirled the icing on, as you can see). any ideas? yours looks great! maybe sprinkles are the trick to making it look like a cupcake instead of a blob with a point on the top.
ps – you can get these at target, and williams-sonoma has a version with deeper indentions for the frosting mold, but it’s also more expensive.
I would try something like Wilton’s 8B tip (http://www.wilton.com/store/site/product.cfm?id=3E30DE4E-475A-BAC0-5286A221EFC16EC2&fid=3E3324E3-475A-BAC0-5EDAC5CF9EC14BE9) to replicate the decorated cupcake look in XXL. Maybe try following the mold then going back and piping inbetween to fill in the gaps.
Alternately, slather icing on from the side of spiral as you work your way around the cake from bottom to top.
