While I know that breakfast is the most important meal of the day and can even be quoted sharing this with my own kids, I’m not really a breakfast person. I’m good to go with a cup of coffee and maybe some toast. While on Weight Watchers though I made an effort to eat breakfast in order to balance out my points. My breakfast would usually end up being around 5 points or less.
Of course when it came time to figure out what I was going to eat for those 5 points I would always get stumped. Until I found this yummy recipe at Roni’s. These muffins are the perfect breakfast to accompany my cup or two of coffee. Plus at only 2 points each I could even have two. Score!!
WHOLE WHEAT BANANA NUT MUFFINS
- 1 and ¼ cups whole wheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- pinch of salt
- 2 egg whites
- 1 large overripe banana
- ½ cup plain non-fat yogurt
- 1 tbsp honey
- 1 tbsp molasses
- ¼ cup applesauce
- 1 tsp almond extract
- 1/8 cup almonds
Preheat the oven to 375 degrees. Put the almonds in a plastic bag and beat with a rolling pin to chop them up. Set aside. Mix and double sift the whole wheat flour, baking soda, baking powder and salt. Set aside. In a medium bowl mash the banana with a fork. Add the egg whites, yogurt, honey, molasses and applesauce. Whisk until well blended and a bit “frothy”. Mix the sifted flour with the banana egg mixture until just incorporated. Don’t over mix! Spray a 6 muffin pan with non-stick cooking spray. Evenly distribute the batter in the muffin tin. Sprinkle crushed almonds on top. Bake for 18 minutes. 2 POINTS!!

These are made in regular muffin pans so they are a regular sized muffin…no mini’s here!!!
