Eggs in a Basket, Eggs in a Hole, there are all different names for this breakfast, which I had never attempted to make before this, but holy cow y’all, it is so simple and delicious and easy!!!
Plus, with fun shape cutters, this is a great cooking project that they kids can help with, too. And we all know that if the kids have a hand in cooking it, they are more likely to eat it!
The eggs are a perfect high-protein to serve with some sliced oranges or grapes and a glass of juice or milk for an energy-filled breakfast! This will keep them full until well into lunchtime and give them the alertness to pay attention in school! YAY Mom! Easy, healthy and beneficial, all the things breakfast should be.
1 Egg
1 slice of Bread
Butter
Heat a skillet over medium-high heat.
Butter both sides of the bread, using a glass or cookie cutter, cut a hole/shape into the center of the buttered slice of bread.
Toast the bread a bit, just enough to start to crisp. Crack the egg into the ‘hole’ and let cook until firm.
Using a good spatula, flip the toast over and cook to your desired firmess.
Serve with fruit and juice or milk, and voila! You’re Done! Easy and Eggscellent!!

Hey, this is one of my favorite easy egg cooking recipes!
My kids always called these “Pop-Eyes” and they were a favorite breakfast for years. Every once in a while I still make them for me; they make me smile.
