Beef Stroganoff Boats

You might be thinking “what’s a beef stroganoff boat…isn’t stroganoff supposed to be served over rice or pasta?” I know it sounds strange but trust me y’all, it’s yummy!
Ingredients:
- 1 loaf fresh French bread
- 1-1.5 lbs ground beef
- 2 c sour cream
- 1 packet of onion soup mix
- 10 oz can sliced mushrooms, with juices
- 1 cup shredded mozzarella cheese
Directions:
French Bread Boat
- Slice off the bottom horizontally and discard
- Turn the rest of the loaf over and scoop out the insides making a ‘boat’ ( be careful not to make holes in the bottom of the boat)
- Brush with olive oil and bake at 350 for 7-8 minutes
Stroganoff Filling
- Brown hamburger meat and drain
- Add onion soup mix and sliced mushrooms with juice ( I chop the mushrooms up very small because otherwise my husband and kids freak out)
- Heat until bubbly
- Slowly add sour cream and then heat thoroughly
- Spoon into prepared French bread boat
- Top with shredded cheese
- Bake 10 minutes and slice to serve
