One of my favorite things about the Flex Plan on Weight Watchers is that it’s a lot like a game. You play and manipulate the points to see how much food you can eat. Eat lots of fruit and veggies then you eat a lot more food, use all your points on ice cream then you only get a couple bowls. Either way it’s up to you on how you use your points.
In order to stay within my points range I’m always looking for snacks that are low in points. This recipe is one of my favorites, because it’s not just low in points it has 0 points. That’s right nothing, nada, free. What is this gift from heaven, you ask?
TOMATO BRUSCHETTA
- 2 c. tomatoes – chopped
- 1 small zucchini
- 1 small onion
- 2 tsp. ground basil
- 1 clove of garlic – minced
- 2 tsp. balsalmic vinegar
- 1/2 tsp. olive oil
- 1/4 tsp. salt
- 1 tsp. ground pepper
- 2 T. grated Parmesan cheese
Combine all the ingredients and mix gently. Serve with celery or other veggies to dip or scoop on thin slices of baguette bread*.
*Don’t forget you will need to count points for the bread.
Hint: If you use bread always slice it thin so you get more bang for the buck. The tomato bruschetta will fill you up if you use a little bread and then load it up!

Oh, this is one of my very favorite things to eat in the summer! That fresh basil can’t be beat. I first had this in Italy…yum!!
