My husband is the cook in the house. When he creates dinner using chicken as the protein, I call it a “cheaper chicken meal” and try my best to say “cheaper chicken” like the wedding planner and then Steve Martin do in “Father of the Bride”. OK, you see my lacking sense of humor but I love that movie and that line.
We had a “cheaper chicken meal” this week and I decided it would be my kick in the butt to start posting some of my husband’s recipes. So here is a version of “Cheaper Chicken” Fried Rice from our kitchen/pantry/freezer!
“Cheaper Chicken” Fried Rice
1 package of Mahatma saffron yellow rice (super cheap or Free with double/triple coupons)
1 package of chicken breasts (we buy the frozen 2.5 lb bags when they are B1G2 or B2G3 sales)
1 package of frozen mixed vegetables (get the store brand for around $1)
soy sauce
salt and pepper
2 eggs (optional)
olive oil
Cook the rice according to the package. Cube the chicken, season with salt and pepper, and cook in a sauce pan with olive oil over medium heat until nearly done. Remove from pan and empty cooking juices. Return chicken to pan and add cooked rice and frozen veggies to sauce pan. Stir as needed. If using eggs, move rice mixture to one side of pan and scramble eggs on other side. When egg is nearly cooked, combine into rice mixture. Season with soy sauce, salt, and pepper to taste as it is cooking and coming together. Serve.
This was two full meals for our family of two adults and two little eaters. So I would guess it is easily a meal for a family of 4-6!
So the tip here is that eating at home is great for your budget. Meals like this are super cheap on your budget and very healthy eats too!
