Velveeta Cheese, Coupons, Recipes and Le Creuset Bakeware… could you ask for anything more?

Well, you can of course, but why?

I mean really? Do you see the cheesiness just oozing off the screen?

I was blessed enough to receive some Velveeta Coupons, a Crowd Pleasing Recipe book and a fabulous Le Creuset Cookware Dish.

I immediately dove into the recipe book and after questioning the kids they chose (shocker) Mac and Cheese. So armed with my coupon, off to the store we went. The only thing I had to purchase was the Velveeta and it was FREE!

Now, I have about 10 recipes for macaroni and cheese ranging from super complicated and fancy to super basic. This ranges in the super basic but totally delicious category.  The kids loved it, especially the crispy Ritz topping and the oozing gooey cheesiness.

Down Home Macaroni & Cheese

• 1/4 Cup (1/2 stick) butter, divided
• 1/4 Cup all purpose flour
• 1 Cup Milk
• 1/2 lb (8 oz) Velveeta pasteurized prepared cheese, cut into 1/2 inch cubes
• 2 Cups elbow macaroni, cooked and drained*
• 1/2 Cup Kraft shredded Cheddar Cheese
• 1/2 Cup crushed Ritz Crackers

1. Preheat oven to 350F. Melt 3 Tbsp. of butter in medium saucepan over low heat.
2. Add flour and mix well. Cook 2 minutes, stirring constantly
3. Gradually add milk, stirring until well blended.
4. Cook on medium heat until mixture boils and thickens, stir constantly.
5. Add Velveeta and cook until melted, stirring frequently
6. Add macaroni and mix lightly
7. Spoon into greased 2 qt casserole dish; sprinkle with shredded cheddar. Melt remaining 1 Tbsp. butter; toss with Ritz crumbs and sprinkle on top.
8. Bake 20 minutes or until heated through

*we used multi-colored shells because my kids love them

I am loving this recipe book and I open my cabinet daily to drool over my gorgeous Le Creuset dish.
