Chocolate Chip Meringue Cookies

These are my favorite cookies to bake-and the kids love them! With a double helping of chocolate, they are crunchy on the outside and chewy on the inside. Chocolate Chip Meringue cookies are easy to make; so easy in fact that your kids can help! These are great to serve to guests and make wonderful gifts.I recently included these cookies in our Christmas gift baskets. Make up a batch today…but be careful they are addicting!
Ingredients:
- 3 tablespoons of cocoa powder
- 1/4 teaspoon of salt
- 1/4 teaspoon cream of tartar
- 3/4 cup of sugar
- 3 egg whites room temperature
- 1/2 cup semi-sweet chocolate chips
- Preheat oven to 300 degrees.
- Line a sheet pan with parchment paper, set aside.
- Beat the egg whites,cream of tartar and salt until it becomes foamy. Continue beating the mixture as you add the sugar one tablespoon at a time, until it forms into stiff,white peaks.
- Blend in the cocoa powder. Fold in the chocolate chips
- .Using a tablespoon, place cookies 1″ apart on prepared baking sheet. Bake for about 30 minutes or until dry.
- Cool completely before storing your cookies in an airtight container. Enjoy!
