Crock-Pot Pork Mole

Would you like a meal that a three-year-old will eat, that is easy to make and can be doubled and frozen? If you answered yes, I suggest you try Crock-Pot Pork Mole. An added bonus is that it makes the house smell delicious!
Combine the following ingredients in a Crock-Pot:
- 2 pound pork roast
- 1/2 cup Mole sauce
- 2 tbsp peanut butter
- 2 tbsp chocolate chips
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 2 cups water
Cook on low for 8-9 hours, or until meat it tender.
Serve with your favorite additions, such as:
- tortillas
- shredded cheese
- sour cream
- shredded lettuce
This is an excellent freezer meal. To freeze, combine all the Crock-Pot ingredients, except the water, in a freezer bag. You can thaw the pork mixture before you put it into the Crock-Pot, or put it in frozen and cook on high for the first few hours.

This looks and sounds easy and delicious! One question – how do you make mole sauce? Is this something I could buy at the store?
You can definitely buy mole sauce! My favorite brand is Rogelio Bueno (it comes in a jar with a bright yellow label). I buy it at Walmart, but I’ve seen mole sauce at Whole Foods and other smaller supermarkets.
