This super versatile and delicious fresh fish taco recipe is perfect for the warm weather that we know is peeking it’s head around the corner. Since warm weather also means tank tops and shorts, my mind immediately turned to the freezer full of wild caught Mahi Mahi and this easy, delicious and healthy fish taco recipes. Not only are these fish tacos figure friendly, they’re fast and easy to make.

One of the best things about this recipe is the flexibility it provides! Don’t have any Mahi? Use Tilapia! Don’t like corn tortillas? Flour sounds good too! Don’t dig on avocado? Just load up on the veggies you do love!
You catch my drift. Here is the recipe as I prepared them (for 2 people), feel free to substitute away – and do share your results!
Fish Tacos
2 3-4 oz. Mahi Mahi fillets
Juice of 2 limes, divided
Approx. 1/4 c. Olive Oil, plus 1 Tbsp.
A good amount of fresh Cilantro, chopped
Avocado, diced
Tomato, seeded, diced
Corn Tortillas
Organic Baby Greens (any variety of lettuce, cabbage, etc… would be delicious here – I just had the baby greens on hand!)
Heat 1 Tbsp. of olive oil on a grill pan or outdoor grill (can also use saute pan), season fish with salt and pepper and add fish to pan. Be sure pan is hot for a good sear but then back the heat down a bit. Using 1/2 of a lime, squeeze over fish (both sides) as it cooks. Depending on your fillet size, about 3 – 4 min. per side should do – you want it to flake easily.
While fish is cooking, juice the remaining limes and add juice to a bowl. Add chopped cilantro and whisk in olive oil to make a lime vinaigrette – add salt & pepper, to taste. Add greens or whatever kind of lettuce you choose and toss lightly, set aside.
Warm tortillas either in the pan used to saute the fish, or in the microwave. After the fish is cooked, let it rest for a couple of minutes and slice it. Assemble the tacos by placing the fish, the dressed greens, chopped tomato and avocado.
Feel free to serve with sour cream or, if you’re feeling sassy, an ice cold Corona…Light, of course!
If you like a little heat, add diced (seeded for less heat) jalapeno to the greens.
*Note: I did not take a photo of my fish tacos but found one that resembled as closely as possible the finished product!
