Christmas breakfast is a big deal in our house. Every year, I try to think of creative and easy ways to make it special for my family.
Last year, we made stuffed French toast and gingerbread man shaped pancakes. The boys love drinking sparkling grape juice from champagne glasses and I love watching them enjoy that special time together.
One thing that is always on the menu is Milk Toast. My grandmother learned to make it from her mother, and my mother learned it from her. It’s so simple, but it’s such an elegant meal to make on a special occasion. The best part? It’s uber-easy.
You can either make it on the stove top or in the oven. I prefer the oven because it allows me to prepare the rest of our breakfast while it bakes.
- Preheat the oven to 350 degrees and butter a shallow baking dish that can fit four slices of bread in a single layer.
- Butter the bread and place in the baking dish.
- Pour 1 1/3 cups of milk over it and cover.
- Bake for 30 minutes.
- Sprinkle with cinnamon and sugar.
- Serve hot.
Knothole Eggs are another fun and easy breakfast. With only three main ingredients, you can’t go wrong.
- 2 slices bread
- 2 Tbsp butter
- 2 eggs
- Salt and pepper to taste
- Toast the bread lightly.
- Normally, I use a wine glass to cut a hole in the center of the bread, but on Christmas I use different shaped cookie cutters.
- Melt butter in a large skillet and place bread side by side in the pan.
- Crack an egg into each hole, letting the yolk fall in the middle. (Some of the white will run over the bread and down the side)
- Reduce heat, sprinkle with salt and pepper and cook for 2-3 minutes.
