The other day while at the farmer’s market I bought some fresh peaches and they were just ripe enough to make a peach pie! This recipe is my all time favorite and is extremely easy. You can use your favorite pie crust recipe {this is a two crust recipe} or use store bought pie crust to save time.
Peach Pie
- Pastry for 9-inch two-crust pie
- 5 cups sliced fresh peaches {about 9 medium}
- 1 teaspoon lemon juice
- 1 cup sugar
- 1/4 cup flour
- 1/4 teaspoon ground cinnamon
- 2 tablespoons butter
- Preheat oven to 425°.
- Place 1 crust into bottom of pie plate.
- Mix peaches and lemon juice. Mix sugar, flour and cinnamon; stir into peach mixture. Pour peaches into pie plate. Place dots of butter on top of the peaches. Cover with your top crust. Carve slits into top, seal and flute.
- Bake until crust is brown and juice begins to bubble through slits, approximately 35 to 45 minutes.
I place my pie on a foil lined baking sheet to protect my oven from spill over.
Serve with ice cream, whipped cream or just plain!
peachy hugs, mb
