Easy Key Lime Pie

If there is any dessert that evokes the memory of Florida summer, for me it would have to be Key Lime Pie. This refreshing, tarty, zing of a dish makes me think of long afternoons in the pool and hot dogs on the grill. It’s as easy to make as it is good to eat. And let me assure you, it is good to eat!
Easy Key Lime Pie Ingredients
- 3/4 Cup key lime juice (or as much as 1 cup if you prefer a more tart pie)
- 2 cans sweetened condensed milk (14 ounce cans)
- 2 eggs
- 1 graham cracker pie crust (9″ if you want an overfilled pie like the one pictured, or 11″ if you’re planning to do a meringue on top)
Easy Key Lime Pie Directions
- Combine key lime juice, sweetened condensed milk and eggs in a bowl and beat with an electric mixer until the ingredients are well blended.
- Pour into pie crust and bake at 375 degrees for 25 – 30 minutes.
- Allow to cool & serve!
*Note: I am a firm believer that key lime pie is best served chilled with a large dollop of fresh whipped cream on top!
