Easy Quiche

I love quiche ~ it is so versatile. You can make it ahead of time and serve it for breakfast, brunch, lunch or dinner…and….you can throw in just about anything you have on hand. I made this super easy chicken quiche for dinner and my family {and I} loved it!
Ingredients:
- 1 refrigerated pie crust {such as Pillsbury’s} or 1 {9-inch} frozen pie crust thawed
- 1 tablespoon oil {olive or vegetable}
- 1/4 cup finely chopped onion
- 1 tablespoon flour
- 2 cups fully cooked, cubed chicken, turkey, ham, etc
- salt to taste {about 1/4 teaspoons}
- 1 cup shredded cheese {your favorite k ind~feel free to mix and match!}
- 2 eggs lightly beaten
- 3/4 cup whole milk
- 3/4 cup sour cream
Directions:
- Preheat oven to 400 degrees F. Line a 9-inch pie plate with thawed pie crust; refrigerate until ready to fill.
- Heat oil in a skillet over medium high heat. Saute onion for 3 minutes, stirring frequently. Add flour, then cook and stir for an additional 2 minutes. Finally, stir in meat and salt and mix well.
- Spread meat mixture over the bottom of the unbaked pie shell, and top with cheese. In a small bowl whip together the eggs, milk and sour cream and pour mixture over chicken mixture.
- Bake at 400 degrees F for 20 minutes, then reduce temperature to 350 degrees F and bake for another 30 to 35 minutes, or until a knife inserted into the pie comes out clean.
