I am all about easy, delicious, filling breakfast foods that will start my family’s day out right and keep them full, satisfied and energized for the day ahead.
My favorite dishes, are the ones that I can prepare the night before and then pop in the oven in the morning while beds are being made (they are too!) and little people are getting dressed and ready for the day.
I especially, most definitely love dishes that are made with ingredients that I always have on hand: eggs, cheese, onions, breakfast meats and seasonings.
This dish is a favorite of mine for family breakfasts, brunches and even breakfast for dinner type of days.
Sausage and Egg Breakfast Casserole
- 4 C frozen shredded hashbrowns
- 2 C shredded low-fat cheddar
- 1 lb (cooked) breakfast meat (low-fat turkey sausage, ham, spicy sausage, turkey bacon) chopped or crumbled
- 1/2 C green onion, chopped
- 8 eggs, beaten
- 2 (12 oz) cans evaporated milk
- 1/2 to 1 tsp pepper
- 1/2 tsp salt
- Arrange hash browns in an even layer in the bottom of a greased 9X13 pan
- Sprinkle with cheese, meat and green onion: Set aside
- Combine eggs, milk, salt and pepper and blend well
- Pour over hash brown mixture, cover and refrigerate for several hours, or overnight.
- Bake, uncovered, at 350 degrees until the center is set. 40 to 50 minutes, if chilled. 50 to 60 minutes if chilled overnight.
Serve with sliced fruit, whole wheat toast and juice or milk. The perfect way to start your day! Energized and full!!
