A stand-by snack in my house is chips and salsa. It’s healthy, delicious and so simple to make. This is the base recipe for our favorite mild garden fresh salsa, but please feel free to have fun with it!
For a more Southwestern feel you could add sweet corn and black beans after blending, for a little extra heat you could use Serrano peppers instead of jalapeno. Going California style? Don’t forget the avocado. And if you’re feeling really ambitious, roast the tomatoes before blending!
Easy Summer Salsa Ingredients
- 1 Pint grape or cherry tomatoes
- 1/4 Medium yellow onion
- 2 Cloves fresh garlic
- 1/4 Cup cilantro leaves
- 1/2 Jalapeno pepper, seeds removed
- 1/2 Green bell pepper
- Lime juice from 1/2 a small lime
- Salt, to taste
Easy Summer Salsa Directions
- Put all the ingredients in your blender or food processor and pulse until desired consistency is reached.
- For best results, refrigerate for 2-3 hours before serving.
