Jackie’s Notes: When I made this I just thought it up as I went and didn’t write down
any exact measurements. So you may have to work with the measurements
until you get it how you like it. When I made this I had no internet,
no recipe books, no measuring cups…I simply thought of it because we
had potatoes and ranch seasoning on hand. And I’m a baked-potato kinda
gal!
Smacznego! ("Smach-nego" means "tasty" in Polish – The Poles say it every time they eat together. Like "Bon Appetit!")
Baked Potato Casserole
4-6 servings
6 – 7 large potatoes – diced (I like to leave the skins on)
4 Tablespoons Butter
1/4 Cup Bacon Bits
1/4 Cup Sour Cream
1 packet Ranch Seasoning
1/2 Cup Shredded Cheese
Ritz Crackers (about 20 or 30)
Salt & Pepper to taste
1. Boil potatoes until soft. After potatoes are boiled, drain & mix potatoes with 1/2 packet of
Ranch seasoning, 2 Tbsp. butter, sour cream, and bacon bits. Add salt
& pepper to taste. Crush crackers and mix with 2 Tbsp. melted
butter. Pour potato mixture into casserole dish and top with cheese
& ritz crackers. Cook on 350-f (or 125 if you’re in Europe) for 20
minutes or until the top is brown & bubbly.
